For those of you, out there, who enjoy eating low carb, here's a recipe that we really enjoy. We eat Nourishing Tradition style for the most part, but even healthy carbs like potatoes and brown rice, make Marlin's blood sugar rise. We try and eat low carb during the week but will eat carbs on the wknd. so we don't miss our potatoes and pasta too bad. I also happen to know that my dear, suffering husband visits the pizza shop on occasion during the week. For business, of course. While we eat egg sandwiches. Or oatmeal. I love you too, Marlin. :)

Ok, for the recipe.

EL DORADO CASSEROLE
2 lbs. ground beef
1/2 cup chopped onion
4 tsp. taco seasoning
salt, to taste
1 cup salsa
4 oz. can chopped green chiles
1 cup cottage cheese
8 oz. sour cream
16 oz. monterey jack cheese
In large skillet brown ground beef and onion; drain the fat (or not). Stir in the taco seasoning, salsa and salt to taste; Stir in cottage cheese, sour cream, and green chiles into the meat mixture along with half of the monterey jack cheese. Pour into greased 9x13 baking dish. Top with remaining cheese and bake at 350 until hot and bubbly. Makes 8-10 servings.
This goes great with a salad and steamed broccoli. Or, forget the low carb thing and serve with warmed tortilla chips, like chips and dip.
