I have great plans for today. Much cleaning and a calm happy mama. To make sure this happens i started out with baking brownies. Now my kitchen's trashed but at least i have some chocolate on the way. The best part........... they're healthy! Well, they would be completely healthy if i would've used grass fed butter instead of regular, and organic bittersweet chocolate instead of regular chocolate pieces but hey, we do the best we can with what we have. The cool thing is, you can make this dairy free and it's already gluten free.

Here's the recipe:

Calm, happy mama brownies

8 oz. butter (substitute coconut oil for dairy free)
2 cups rapadura (i used a mixture of sucanat, maple syrup and coconut sugar)
8 oz. bittersweet chocolate
2 T real maple syrup
4 eggs
2 tsp. vanilla
1 1/2 cup coconut flour (can buy it at health food store or online)
4 T cocoa powder
1 tsp. baking powder
1/2 cup raw heavy cream (can use coconut milk)
1 pinch sea salt
1. Preheat oven to 350 degrees and grease 8x8 pan with butter.

2. Add butter, rapadura, chocolate and maple syrup to a medium saucepan and melt on low heat, stirring til melted and smooth. Check flavor by eating a couple tablespoons.

3. Stir in cocoa powder. Remove from heat and set aside to cool. Again check flavor.

4. Beat eggs and vanilla together til frothy. On low speed, mix in cooled chocolate mixture.

5. Add in flour, ( using sifter) heavy cream, baking powder, beating after each addition. Make sure it tastes the way you want. Adjust skirt and try to forget that it's tighter than when you started.

6. Pour mixture into greased dish and bake brownies in preheated oven for 40-50 minutes until top of brownies is crisp and the edges begin to pull away from pan.

Put kids to bed, pour yourself a large glass of raw milk and enjoy the moment of bliss.

Okay, i have to be honest. I've never made these brownies before but really, how can they not be good and the dough was fantastic. At least that's what the kids told me.................

UPDATE: I like them but they aren't quite the same as those real fudgy rich brownies that you can make from a box. That's probably because of the coconut flour and lack of preservatives. I don't ever buy box brownies because i have a conscience problem with all those horrific ingredients. On the other hand, the Bible is clear that if someone else serves me food, i shouldn't ask questions but eat with a clear conscience...........;)

  1. just wanted to let you know that i'm enjoying "keeping up" with you through your blog. Maybe one of these days I'll start one too. Oh and i tried the crusty bread recipe and used all fresh ground whole wheat flour...it turned out great. Eric thinks I should sell it! :) Also tried the cake recipe (I have the nourishing traditions cookbook)...I liked it but Eric wasn't so sure about that one. Hope you're having a "calm mama" day.
