Chocolate Coconut Milk Ice Cream

One of our favorite homemade healthy desserts is ice cream. Our favorite vanilla ice cream recipe, using raw cream, is in the Nourishing Traditions cookbook. Totally raw, including raw egg yolks, it surpasses any cooked recipe we've ever tried, with a rich smooth texture.

Our second favorite recipe is chocolate coconut milk ice cream. We're going over to friends tonight after supper and we're taking this ice cream along. I have to admit, i've never made it with all coconut milk before but our friends are allergic to any kind of milk so i'm excited to try it. We love coconut milk and chocolate and this combination can't be beat. Best of all, it's highly nutritious and very healthy for the ladies who are both pregnant. (I won't say much about the white flour italian cheese bread that i'm making for our supper. Pregnant ladies aren't supposed to make sense.) My favorite brand of coconut milk is Thai Kitchen's organic. NOT lite, but the full fat creamy kind. You can find them at health food stores or, if you're very, very lucky, at your discount grocery store. Last week i went to my favorite discount grocery store and not only did i find organic olive oil and healthy mayo for unbelievable prices, (still not out of date) i found my favorite coconut milk for $.59 a can!! Retail value starts at $1.99 per can. I nearly held a praise and worship session right then and there.

Okay, for the recipe.

CHOCOLATE COCONUT MILK ICE CREAM

2 14OZ. CANS COCONUT MILK
1/3 CUP COCONUT SUGAR (OR MAPLE SYRUP, AGAVE OR HONEY)
2/3 CUP COCOA POWDER
1 TSP. VANILLA
A DASH SEA SALT
COMBINE ALL INGREDIENTS IN LARGE BOWL AND BLEND WITH IMMERSION BLENDER. (OR USE REGULAR BLENDER)
MAKE ACCORDING TO YOUR ICE CREAM MAKER'S INSTRUCTIONS.

I'm thinking the only thing we need to add to a perfect dessert is fresh strawberries, toasted almonds and raw whipped cream. Just a couple of months yet........

  2. I looked up ethnic grocery stores in the phone book and started making phone calls. I found an asian store in lancaster that carries it. Every other store told me in broken english that, "yes, they have it" only to admit that yes, it's white. The other place is here. http://www.navitasnaturals.com/products/palm.html It's much more expensive from Navitas but i'm sure it's a higher quality product. The only way the ethnic store carried it was in little hard blocks which is a pain, but better than nothing.
